
BBQ-Grilled Tomahawk Steak
Tomahawk steaks are essentially ribeye steaks with the bone protruding from the meat like a handle. It may look like a complex cut of meat, but it’s actually very simple to season and grill up on a hot BBQ. Tomahawk steaks tend to be quite thick, since they’re at least the width of the rib that they’re attached to. Because of this, they’ll take a few more minutes to cook than most other steaks that you might be used to, but it’s well worth the wait!
Because the meat comes from a fatty part of the cow, it’s extremely rich in flavour, and makes for a very juicy cut when cooked. What’s more, unlike the shoulder or hindquarters of the animal, the muscles around the ribs aren’t used very much. Ingredients
- 1 tomahawk steak
- Salt
- Coarsely ground black pepper
- BBQ rub or spice rub of your choice
- Olive oil
Instructions
- Before you begin, take the steak out of the fridge and leave it covered at room temperature for about 20 minutes. If you are using a barbecue instead of an oven grill, light it and close the lid. Allow it to heat up for 15 minutes.
- Lay your steak on a large clean surface such as a chopping board, and generously drizzle the olive oil over both sides to coat it. Then, liberally sprinkle each side with coarsely ground salt and pepper. Do the same with your spice rub, using as much or as little as you would like to adjust the flavour.
- Next, place the steak on the hottest part of your grill, and cook for 5-8 minutes, depending how thick the cut is. The meat should begin to brown, and the rub should caramelise. When the steak is evenly cooked and the juices run clear, remove it from the heat and allow to rest for 5 minutes.
- Give it one last dusting of black pepper and serve hot with a side of chips, salad, or grilled potatoes.
