This recipe, like the avocado, is a classic. Quick, simple, and easy, it’s well worth knowing so you can whip it up when a bowl of cereal for breakfast just isn’t going to cut it. It’s a great way to use up an avocado before it goes bad, and it can be personalised with whatever herbs and toppings your heart desires! A simple classic beloved by many that's worth knowing and perfecting. Try all sorts of your own favourite herbs, spices, and toppings to personalise this quick and healthy recipe.
Ingredients
- Half a ripened avocado
- 2 slices or bread of your choice, toasted
- 1 tsp oregano 1 tsp lemon or lime juice
- Salt and pepper to taste
- Chili flakes, crushed nuts, or another topping of your choice
- 1 tsp olive oil
Instructions
- Whilst your toast is toasting, halve the avocado by cutting all the way around the circumference, from top to bottom. Twist the avocado open and use a sharp knife to carefully remove the pit.
- Thoroughly mash the avocado in a small bowl with the back of a fork, and add the oregano. Then, squeeze in the lemon juice and add freshly ground salt and pepper to your preference.
- Mix the ingredients together, and spread generously over the toasted bread before sprinkling on the chili flakes, or another topping of your choice. Drizzle a little olive oil on top, or pour some into a shallow container to dip the bread into.
- Finally, serve up either on its own, or with a poached egg or salad as a quick, healthy snack.
