Rich and deep pork and black bean chilli. This quick and easy recipe will have a classic crowd-pleasing dish from your kitchen to your table in just 20 minutes. A old-time favourite that's easy to customise to your tastes, this meal is just hard to beat.

Ingredients

  • 300 g of minced pork
  • ½ small red onion, finely sliced
  • 1 tsp of chipotle chilli paste
  • Pinch of chilli flakes
  • 1 tsp of cumin
  • 1 tsp of smoked paprika
  • 250 g of black beans
  • Juice of half a lime

Instructions

  1. First, heat a splash of oil in a frying pan on a high heat and add the pork. Season with salt and your choice of herbs, then cook for 5 minutes, or until the pork begins to form a crisp crust.
  2. Next, lower the heat and add the onions, chipotle paste, and another splash of oil if necessary. Fry for about 5 minutes, or until the onions start to get soft.
  3. Add the cumin, paprika, and chilli flakes. Mix well and allow to cook for a further minute. Then, add the beans, along with any juices, and leave the chilli to simmer for 5 minutes. If it gets too dry, simply add a splash of water.
  4. Finally, squeeze in the lime juice and taste, adjusting to your preference for the perfect heat. Top it off with a garnish of fresh herbs like spring onion and coriander, and serve hot.
