A beginner's guide to fish on the BBQ. This is a quick and easy recipe that'll leave you with a simple juicy cut of fish, perfect to serve alongside summer greens or chunky cut chips.

Ingredients

  • 2 boneless salmon fillets
  • Half a lemon
  • Olive oil
  • Freshly ground salt & pepper
  • 1 knob of ginger root

Instructions

  1. First, light your BBQ and allow to heat for at least 20 minutes.
  2. Drizzle olive oil over the fillets so they are evenly coated. Sprinkle a generous amount of salt and pepper over the fish, and squeeze over the juice from half a lemon.
  3. Then, grate or very finely mince the ginger over the fillets, and allow to rest for a few minutes to absorb the flavour.
  4. Once the salmon and grill are both ready, lay the fillet on the BBQ for about 3 minutes on both sides, ensuring it is cooked all the way through. It should be beginning to flake, with just a little translucency remaining in the center.
  5. Take the salmon off the heat, and allow it to rest on a cutting board for a few minutes before serving hot with a summer salad.
