
Ñoquis de chorizo, champiñones y mozzarella

Soft bites of gnocchi baked in a rich tomato sauce, brought to life with red wine vinegar and chili flakes. All topped off with melted mozzarella, this is a heartwarming and decadent dish.
Ingredients
- 1 onion, chopped
- 2 cloves or garlic, minced
- Handful of chorizo, diced
- Handful of mushrooms, roughly chopped
- 1 tin chopped tomatoes
- 1/2 tsp chili flakes
- 1 tsp sugar
- Dash of red wine vinegar
- Sprig of fresh basil
- Pack of gnocchi
- 1 ball of mozzarella
- Freshly ground salt and black pepper
Instructions
- First, heat a drizzle of olive oil in a large, oven-proof pan. Add the chopped onions and gently cook for 3-5 minutes or until they begin to soften. Add the garlic and cook for a further couple of minutes. Next, add the chorizo and mushrooms, and cook for another 1-2 minutes, or until everything has evenly cooked through.
- Add the tinned tomatoes, chili flakes, sugar, and red wine vinegar to the pan. Stir throughout, and season with salt and pepper. Simmer for 1-2 minutes before incorporating the gnocchi.
- Tear or slice the ball of mozzarella into about 6 even pieces and lay on the surface of the mixture. Bake the whole pan in the oven at 180°c for about 8 minutes, or until the mozzarella is golden brown around the edges.
- Roughly tear the basil leaves over the gnocchi, and garnish with a dusting of parmesan and black pepper. Finally, serve hot with a side salad or crusty garlic bread.
