
Grilled Ginger and Lemon Salmon

A beginner's guide to fish on the BBQ. This is a quick and easy recipe that'll leave you with a simple juicy cut of fish, perfect to serve alongside summer greens or chunky cut chips.
Ingredients
- 2 boneless salmon fillets
- Half a lemon
- Olive oil
- Freshly ground salt & pepper
- 1 knob of ginger root
Instructions
- First, light your BBQ and allow to heat for at least 20 minutes.
- Drizzle olive oil over the fillets so they are evenly coated. Sprinkle a generous amount of salt and pepper over the fish, and squeeze over the juice from half a lemon.
- Then, grate or very finely mince the ginger over the fillets, and allow to rest for a few minutes to absorb the flavour.
- Once the salmon and grill are both ready, lay the fillet on the BBQ for about 3 minutes on both sides, ensuring it is cooked all the way through. It should be beginning to flake, with just a little translucency remaining in the center.
- Take the salmon off the heat, and allow it to rest on a cutting board for a few minutes before serving hot with a summer salad.
